
My mother gave me this recipe to create her Mother’s Day cake in May of 2011. It’s her favorite. My dad doesn’t normally enjoy cake or sweets and will eat this cake. I also made this for him for Father’s Day in June of 2011.

Whipped Cream Frosting
I wanted to do a good whipped cream frosting for my mother’s “strawberries and cream” Mother’s Day Cake and went a-huntin’ online. Allrecipes.com had one called “Sturdy Whipped Cream Frosting” and I thought, “Well, no one wants ‘wimpy’ frosting, so how about I try this one!” Although it uses cream cheese, you don’t even taste it. My mother still talks about that frosting to this day – it’s a good one!

Mother’s Day Cake
Cooking food for mother usually doesn’t result in too much praise for the chef. She is a great cook and not much compares to her delicious dinners and savory sweets. However, this cake really ‘took the cake!’ Upon eating it, she made the bold statement, “This is the best cake I’ve ever had.” It was like Gordon Ramsay himself telling me I did a good job on Master Chef! I will take that moment to the grave. Admittedly, the cake was pretty tasty. It was a 3-layer homemade pound cake filled with a strawberry/chocolate filling and topped with a homemade whipped cream frosting made from cream cheese. Mmm mmm goooood.
